Oyster Pie - Mountain Song Restaurant Recipe >
Makes: 2 servings
INGREDIENTS
2 prepared small pie crusts

2 oz fresh mushrooms, sliced
1+ Tbs butter
1 Tbs flour
2/3 cup water
¼ tsp vegetarian soup base
½ tsp cooking sherry
salt, to taste

2 slices bacon, chopped
2 Tbs onion, chopped small
6 medium oysters, cut up
3 Tbs butter
½ cup cooked potato, cubed or coarsely grated
salt & pepper, to taste
PREP DETAILS
Roll out pie dough to prepare two crusts, each shaped to fit a deep serving dish or ramekin (about 10 fl oz size). Bake until browned and reserve.
Sauté mushrooms briefly in a little butter in saucepan. Remove and reserve aside. Finish making the sauce...
In same saucepan, add remaining butter, melted over low heat, and sprinkle in the flour, whisking until smooth. Continue stirring while adding the water, then boil for 3 minutes. Add in the sauteed mushrooms, base, sherry and salt. Hold completed sauce warm.
Sauté onion with bacon until the onions are clear. Add the oysters and cook until done, about 3 minutes. Add in butter and potato, mixing well. Season and cook until heated through.
Transfer filling to the two serving dishes and cover each with its individual crust. Pour sauce over crusts. Garnish and serve while hot.
